Creamy Lemon Basil Spaghetti Squash with Chicken

Creamy Lemon Basil Sauce (Approximately 1 Cup)
  1. 1 Avocado (½ cup mashed)
  2. 6 garlic cloves
  3. 1 cup fresh basil leaves
  4. 1 Tbsp lemon zest
  5. 1/3 cup lemon juice
  6. ¼ cup olive oil
  7. 1/8 tsp cayenne pepper (optional)
  8. ½ tsp black pepper
  9. ½ tsp sea salt
Spaghetti Squash
  1. 2 tsp coconut oil
  2. 3 cups spaghetti squash, cooked (or pasta of choice)
  3. 1 cup chopped kale
  4. 8 oz cherry tomatoes
  5. ½ tsp black pepper
  6. ½ tsp sea salt

2 Chicken Breasts (or other protein)

Instructions
  1. Place all of the sauce ingredients in a food processor or blender and puree until smooth.
  2. Cube chicken and sauté in coconut oil over medium-high heat.
  3. Add the tomatoes and sauté about two minutes.
  4. Add the rest of the ingredients and sauté for another 5 minutes. Add about ½ cup of the sauce and mix thoroughly.
  5. Serve as is or add other vegetables.
